Chicken masala

Ingredients:

chicken joints
finely chopped onions
chopped garlic
chopped ginger
turmeric powder - 1tsp
coriander powder - 2tsps
chilli powder - 1tsp
cumin powder - 11/2 tsp
garam masala - 1tsp
salt to taste
cooking oil - 4tbsps
tomatoes - finely chopped
green chillies - whole - 2or3
coriander leaves - finely chopped

Method:

Cut each chicken joint in two. Place the onion, garlic and ginger in a mixie and blend to a smooth paste. Heat the oil and add the blended puree/paste . Stir and fry for 2 or 3 minutes. Add turmeric, coriander, cumin and chilli powder and fry for 3 minutes. stirring frequently. Add the tomatoes. stir and cook for few minutes. Then add the chicken, stir and cook until chicken changes colour or 5-6 minutes. Add salt and water, bring to the boil, cover and simmer until the chicken is tender. Stir occasionally. And then add the whole green chillies and garam masala, cover and cook for few minutes. Remove from heat and stir in the coriander leaves. Ready to serve and eat. Serve with plain rice or chapathi.

PRAWNS FRY

Ingredients:

Fresh prawns
finely chopped onions
finely chopped green chilli
coriander powder - 2tbsps
turmeric powder - 1/4tsp
salt to taste
coriander leaves(Optional)

Method:

Chop the prawns coarsely. Heat the oil in a pan and fry the onion and the green chilli until the onion is colour changes. Then add the coriander powder and turmeric, stir and fry for one minute. And add the prawns and salt, stir and fry for 4-5 minutes. Add little water (1 or 2 tbsps) and adjust the heat to low and let it cook until it begins to brown, stirring occasionally. Remove from the heat. Stir in the coriander leaves. Serve with any meals.

Tuna Fish Fry:

Ingredients:

One tuna fish tin
finely chopped onions
finely chopped green chilli
finely chopped tomatoes
chilli powder - 1/2 tsp
coriander powder - 2tbsps
salt to taste
coriander leaves

Method:

Chop the prawns coarsely. Heat the oil in a pan and fry the onion and the green chilli until the onion is colour changes. Then add the tomatoes and fry for 2 minutes, then add chilli powder and coriander powder, stir and fry for few seconds. And add the tuna fish with oil and salt to taste, stir and fry for 2-3 minutes. Stir and mix well. Remove from the heat. Garnish with coriander leaves. Serve with bread or roti or any meals.
